Grape Harvest and The Ultimate Guide to Cold Storage Preservation
Grapes are non-climacteric fruits, meaning they do not continue to ripen after being harvested. Therefore, preserving their quality from the moment they are picked depends entirely on proper harvesting techniques and a flawless cold chain. Here are the rules and conditions to keep grapes fresh in cold storage for extended periods:
1. Proper Harvesting and Handling

Timing: Grapes should be harvested during the coolest parts of the day, typically early in the morning.

Gentle Handling: When cutting the bunches, the fruit should be touched as little as possible to protect the natural waxy coating (bloom) on the grapes. This coating acts as a natural preservative.

Sorting: Damaged, crushed, or diseased berries must be removed from the bunch during harvest; otherwise, they will cause healthy berries to rot in storage.
2. Pre-Cooling (The Critical Stage) Harvested grapes carry "field heat," which causes rapid water loss and deterioration. Before being placed in long-term storage, grapes must undergo pre-cooling (usually forced-air cooling) to bring their temperature down to the ideal storage level as quickly as possible.
3. Cold Storage Conditions The storage life of grapes varies between 2 to 6 months depending on the variety. To maximize this duration, the following conditions must be strictly observed:

Temperature: The ideal storage temperature is between -1°C and 0°C. Because of their high sugar content, grapes do not freeze at -1°C. However, temperature fluctuations must be strictly avoided.

Humidity: Relative humidity should be maintained at 90% - 95%. A drop in humidity causes the stems to dry out and turn brown, and the berries to shrivel.

Air Circulation: Airflow within the storage room must be balanced, and the stacking of boxes or crates should not block the passage of air.
4. Disease Control and Preservation Rules (SO2 Treatment) The biggest enemy of stored grapes is Gray Mold (Botrytis cinerea).

To stop fungal growth, periodic Sulfur Dioxide (SO2) fumigation is applied in the storage rooms, or SO2-generating pads are placed directly inside the grape boxes.

The dosage of SO2 gas must be carefully calibrated; an overdose can lead to bleaching of the grapes and an off-flavor.
